Bread Machine Dough for Sweet Rolls

Sweet Rolls! 


Ingredients for dough:
  1. 1 1/3 cup very warm water
  2. 1 stick salted butter, at room temperature, sliced into pieces
  3. 5 Tbsp sugar
  4. 1 large egg
  5. 1/2 tsp salt
  6. 4 1/2 cups all purpose white flour
  7. 1 Tbsp quick rise yeast
Directions for dough:
  1. Put all ingredients in the bread maker in the order listed. 
  2. Select the Dough cycle and let the machine do it's thing (I ended mine after 45 min since it had sufficiently risen)
  3. While dough is rising, prepare filling of choice.
Ingredients for cinnamon filling (enough for half the dough recipe):
  1. Heaping 1/2 cup of packed brown sugar
  2. 1 Tbsp cinnamon 
Ingredients and directions for berry filling (enough for half the dough recipe):
  1. Put about 1 1/2 cups fresh or frozen blackberries in a saucepan on med high on the stove top.
  2. Add 2 Tbsp white sugar, stir, and bring to a boil.
  3. Mix 1 Tbsp corn syrup into 1 Tbsp lemon juice. Add to boiling berry mixture.
  4. Boil for 1 minute, stirring constantly, then remove from the heat.
  5. Stir in 1 Tbsp of salted butter and let cool to room temperature.
Directions for assembling and baking rolls:
  1. Dough will be sticky when it's done, so place it on a floured counter. 
  2. Make one really long rectangle or separate the dough into two equal parts and make 2 smaller rectangles. You're aiming for the width of the rectangle to be about 12 inches. 
  3. Spread a few tablespoons of melted butter evenly over the dough.
  4. Distribute filling evenly over the dough. You don't have to go all the way to the far edge because as you roll the filling gets pushed up.
  5. Beginning with the width-side closest to you, roll the dough towards the far edge. You should have a long cylinder with the filling rolled inside.
  6. Using a sharp knife, cut the dough log into pieces. I slice mine about 1.5-2 inches long.
  7. Arrange the cut pieces on a parchment lines cookie try, spiral side up as seen in the first picture.
  8. Cover tray with plastic wrap and let rise for another hour or so.
  9. Preheat oven to 350 degrees.
  10. Uncover rolls and bake for 17 minutes, or until golden brown.
  11. Let cool while you prepare the frosting. 
Cream Cheese frosting and directions:
  1. 4 oz room temperature cream cheese
  2. 4 Tbsp salted butter
  3. 1/2 tsp vanilla extract
  4. Mix in a stand mixer until combined.
  5. Slowly add in 1 cup of powdered sugar. Add more as needed to get a thick frosting. If adding more flavors to the frosting, make sure it is very thick first. 
  6. I separated my frosting into two bowls. In one bowl I added a few Tbsp of leftover blackberry sauce. Mix well.
  7. In the other bowl I added a Tbsp of real maple syrup. Mix well.
  8. Spread frosting over cooled but slightly warm rolls and enjoy!

Ooey Gooey Chicken - Instant Pot Version


Ingredients:
  1. 3 chicken breasts, frozen
  2. 1 cup water
  3. 1 can cream of chicken
  4. 1 cup of mild salsa
  5. 1 can black beans, drained and rinsed
  6. 1 can green chiles
  7. 1/4 tsp black pepper
  8. 1/2 tsp chili powder
  9. 1/2 cups cheddar cheese
  10. 1 cup frozen corn, optional
  11. toppings: white rice, tortillas chips, lettuce, tomatoes, tapatio 
Directions:
  1. Spray Instant Pot with non-stick spray. Add chicken and water.
  2. Select Manual 15 minutes (up to 22 depending how thick chicken breasts are).
  3. When finished, quick release and remove the chicken to a plate for shredding.
  4. Strain the hot water into big bowl and add half of it back to the Instant Pot.
  5. Add cream of chicken and salsa and mix well. 
  6. Shred chicken while Instant Pot heats up on Sautee. 
  7. Once hot, add black beans, chiles, and spices and stir well.
  8. Turn off Instant Pot and stir in shredded chicken, cheese, and frozen corn if using.
  9. Add chicken mixture to a tortilla with desired toppings.

Blender Salsa

Ingredients

  1. 1 jalapeno, de-seeded and roughly chopped
  2. 1/3 white onion, roughly chopped
  3. 1/2 small bell, roughly chopped
  4. 1 jar canned tomatoes, drained but not rinsed
  5. a few splashes of lime juice
  6. 1/4 tsp salt
Directions:
  1. Put first 3 ingredients and half of the tomatoes in blender. Blend on "sauces" setting for 3 seconds, or until finely chopped.
  2. Add remaining tomatoes and last 2 ingredients and pulse a few times.
  3. Store in clean glass jar in refrigerator.

Bread-Machine French Bread

Adjusted recipe from BREADMAN- instead of using bread machine yeast and bread flour... 

Ingredients:

Water (80°F-90°F)scant 1.5 Cup(s)
Sugar
Quick Rise Yeast
1 Tbsp
1 ½ tsp
Saltscant 1 ½ tsp
White Flour4 Cup(s)
Vital Wheat Gluten6 tsp

Directions:

Dump the first 3 ingredients into the bread machine bowl. Stir and then set aside to let yeast begin feeding, about 5 min. Add the rest of the ingredients. Place bowl in machine and select French Bread 2 LB, and light crust. Let the machine do it's thing! It takes a little over 3 hours to finish.

Air Fryer Fish n Chips

 Here's the recipe for crispy fish that isn't as greasy as traditional fried fish.


Ingredients:
  1. 2 big pieces of cod, or other white fish, thawed
  2. 2 slices of bread- pulsed to bread crumbs
  3. 1/2 tsp onion powder
  4. 1/2 tsp lemon pepper
  5. 3 Tbsp mayo
Directions:
  1. Preheat air fryer to 375.
  2. Mix the next 3 ingredients and place in a pie pan
  3. Pat the fish with paper towels. Make sure it is very dry.
  4. Cut fish into serving size pieces. 
  5. Spread mayo on both sides of one piece of fish and then dredge in bread crumb mixture. Set aside.
  6. Repeat with remaining fish pieces.
  7. Spray one side of the breaded fish with nonstick cooking spray or drizzle on a little vegetable oil.
  8. Spray the heated air fryer basket with nonstick cooking spray and add 2 or 3 pieces of fish, sprayed side down.
  9. Spray the other side of the fish that is face up in the air fryer, the side that hasn't been greased yet.
  10. Cook fish for 10-12 min at 375 degrees.
  11. Flip halfway through cooking.
  12. Salt fish to taste when it's finished cooking.
  13. Serve with chips.

Breakfast Casserole

Basic, but perfect. Add any veggies as it cooks or toppings when it is done. Here it is nice and plain for the boys:

Ingredients:
  1. 24 oz frozen hashbrowns
  2. salt and pepper
  3. 2 c meat (ham, cooked sausage, etc)
  4. 12 eggs
  5. 2 c milk
  6. 1/2 tsp seasoned salt
  7. 3 c cheese
Directions:
  1. Spray a 9x13 pan. Add the frozen hashbrowns and sprinkle with salt and pepper.
  2. Sprinkle meat evenly over potatoes.
  3. In a large bowl, whisk the eggs, milk, and seasoned salt. Add cheese and mix well.
  4. Pour egg mixture over potato mixture and cover with foil.
  5. Refrigerate at least 2 hours, or overnight.
  6. When ready to bake, remove casserole from fridge and leave on counter for 15 minutes.
  7. Place covered casserole into cold oven and turn on to 350 degrees. When the oven comes to temperature, set a time for 50 minutes.
  8. After 50 minutes, remove foil and continue to bake for another 15-20 minutes, or until cheese on top has toasted.
  9. Let the casserole rest for a few minutes to cool before serving. 

Grammie's Berry Dessert

 This is a family favorite:

Ingredients:

  1. 1 sleeve of graham crackers, crushed to crumbs
  2. 6 Tbsp melted butter
  3. 1 pkg Dream Whip
  4. 1/4 c milk
  5. 1 c sugar
  6. 8 oz cream cheese, softened 
  7. 1 pkg strawberry Danish Dessert
  8. 2 cups frozen berries, thawed and drained
  9. 1 1/2 c water, or liquid from thawed strawberries
Directions:
  1. Mix together graham crackers and butter. Pat in the bottom of a 9x13 pan to make a crust.
  2. Beat together Dream whip, milk, sugar, and cream cheese.
  3. Pour cream mixture on top of graham cracker crust.
  4. In a pan on top of the stove, heat together Danish Dessert and liquid. Boil for about 30 seconds or until thickened. 
  5. Remove Danish Dessert from heat and add the strawberries. Pour on top of cream cheese mixture.
  6. Cover when completely cooled and refrigerate 4 to 5 hours, or overnight.
