Bread Machine Dough for Sweet Rolls

Sweet Rolls! 


Ingredients for dough:
  1. 1 1/3 cup very warm water
  2. 1 stick salted butter, at room temperature, sliced into pieces
  3. 5 Tbsp sugar
  4. 1 large egg
  5. 1/2 tsp salt
  6. 4 1/2 cups all purpose white flour
  7. 1 Tbsp quick rise yeast
Directions for dough:
  1. Put all ingredients in the bread maker in the order listed. 
  2. Select the Dough cycle and let the machine do it's thing (I ended mine after 45 min since it had sufficiently risen)
  3. While dough is rising, prepare filling of choice.
Ingredients for cinnamon filling (enough for half the dough recipe):
  1. Heaping 1/2 cup of packed brown sugar
  2. 1 Tbsp cinnamon 
Ingredients and directions for berry filling (enough for half the dough recipe):
  1. Put about 1 1/2 cups fresh or frozen blackberries in a saucepan on med high on the stove top.
  2. Add 2 Tbsp white sugar, stir, and bring to a boil.
  3. Mix 1 Tbsp corn syrup into 1 Tbsp lemon juice. Add to boiling berry mixture.
  4. Boil for 1 minute, stirring constantly, then remove from the heat.
  5. Stir in 1 Tbsp of salted butter and let cool to room temperature.
Directions for assembling and baking rolls:
  1. Dough will be sticky when it's done, so place it on a floured counter. 
  2. Make one really long rectangle or separate the dough into two equal parts and make 2 smaller rectangles. You're aiming for the width of the rectangle to be about 12 inches. 
  3. Spread a few tablespoons of melted butter evenly over the dough.
  4. Distribute filling evenly over the dough. You don't have to go all the way to the far edge because as you roll the filling gets pushed up.
  5. Beginning with the width-side closest to you, roll the dough towards the far edge. You should have a long cylinder with the filling rolled inside.
  6. Using a sharp knife, cut the dough log into pieces. I slice mine about 1.5-2 inches long.
  7. Arrange the cut pieces on a parchment lines cookie try, spiral side up as seen in the first picture.
  8. Cover tray with plastic wrap and let rise for another hour or so.
  9. Preheat oven to 350 degrees.
  10. Uncover rolls and bake for 17 minutes, or until golden brown.
  11. Let cool while you prepare the frosting. 
Cream Cheese frosting and directions:
  1. 4 oz room temperature cream cheese
  2. 4 Tbsp salted butter
  3. 1/2 tsp vanilla extract
  4. Mix in a stand mixer until combined.
  5. Slowly add in 1 cup of powdered sugar. Add more as needed to get a thick frosting. If adding more flavors to the frosting, make sure it is very thick first. 
  6. I separated my frosting into two bowls. In one bowl I added a few Tbsp of leftover blackberry sauce. Mix well.
  7. In the other bowl I added a Tbsp of real maple syrup. Mix well.
  8. Spread frosting over cooled but slightly warm rolls and enjoy!
