Horchata

Ingredients:

6 and 1/2 cups water
3 cups milk
2 cups white uncooked rice
1/2 cup chopped almonds
1 Tbsp cinnamon or 1 cinnamon stick
1 Tbsp vanilla
1 cup sugar

Directions:

1. Combine 3 cups of water, 1 cup of milk, rice, almonds, and cinnamon in a blender. Blend for a few seconds on low to roughly cut up the rice.
2. Add the 3 remaining cups of water to the mixture and place mixture in fridge. Let it sit overnight or at least 6 hours. Stir once or twice while it soaks.
3. Strain the mixture into a big bowl or big jug. Add remaining 2 cups of milk, the sugar, and the vanilla. Stir well.
4. Keep chilled and stir well again before serving. Serve over ice.

Chocolate Protein Smoothie without Protein Powder

I don't really like protein powder and I don't like fake sugar, so I never have either on hand and most protein smoothie recipes call for them. This good for you, filling recipe doesn't use either! Give it a try. It's like drinking a candy bar!

Ingredients:
2 cups coconut or almond milk
1/2 - 1 cup of ice
1 Tbsp cocoa powder
2 Tbsp nut butter
1 Tb honey
1/2 Tbsp chia seeds
1/2 Tbsp flax seeds
1/2 tsp vanilla

Directions:
Add all ingredients to blender and select Smoothie option.

Jamba-ish Juice

I've looked for copcycat Jamba juice recipes, and none of them really taste that great to me. I just spurr of the moment made this one up, and it rocks! It would be even better with mango and passionfruit, but I never have those on hand. This is from ingredients I usually have in the freezer/fridge. Only problem is I didn't measure anything, I just threw it in, so this is as close as I can guess. Blend it up, taste it, and adjust as needed.
Ingredients:
1 cup pineapple sherbet
1/2 cup frozen strawberries
1 cup orange juice
1/2 cup water
1 tsp sugar

Directions:
1. Place all ingredients in blender, blend until smooth.

Coconut Tres Leches Hot Cocoa

This is really sweet and rich, so it's super delicious in small quantities. Or frozen as an ice cream, I've done that too. Mmmm. I think though next time I'll add another cup of milk to tone it down a little.
Ingredients:
3 cups fat-free milk
1 14-oz. can unsweetened coconut milk
1/2 of a 14-oz. can sweetened condensed milk (2/3-cup)
2 Tbsp. unsweetened cocoa powder
1/2 tsp. vanilla
Sweetened whipped cream (optional)
1/4 cup chocolate shavings (optional)

Directions:
1. In medium saucepan combine fat-free milk, coconut milk, and sweetened condensed milk. Bring to a simmer over medium-low heat, stirring occasionally. Whisk in cocoa powder until well-combined.
2. Remove from heat; stir in vanilla. Serve in mugs topped with whipped cream and chocolate shavings. Makes 5 (1-cup) servings.
