My favorite Chicken dish

This is a copy-cat version of a Chinese take-out favorite called Bourbon Chicken. I first tried it 5 years ago from recipezaar. I loved it! We make it at least once a month. Plus it now has over 2,000 perfect reviews. Can't argue with that.


Ingredients:
2-3 chicken boneless chicken breasts, cut into bite-size pieces
1-2 tablespoon olive oil
2 garlic clove, crushed
1/2 teaspoon ground ginger
3/4 teaspoon crushed red pepper flakes (or more to flavor)
1/2 cup apple juice
2/3 cup light brown sugar
4 tablespoons ketchup
2 tablespoon cider vinegar
1 cup water
1/2 cup soy sauce

Directions:
1. Heat oil in a large skillet.
2. Add chicken pieces and cook until lightly browned.
3. Remove chicken.
4. Add remaining ingredients, heating over medium Heat until dissolved and boiling.
5. Add chicken and bring to a hard boil.
6. Reduce heat and simmer for 20 minutes.
7. Serve over hot rice and ENJOY.
